Beef rib x 1400g for four
A couple of hours before you want to cook the beef, season well with coarse salt and leave it out of the fridge.
Preheat the oven 100C
Heat a large heavy bottomed pan over a high heat. Rub the beef with a little olive oil. Lower it into the very hot pan and brown evenly turning the meat every minute until it has an even colour and crust. Transfer the meat onto a tray and into the oven. Continue to cook for 25-30 minutes or until you reach a core temperature of 52C. Remove the beef from the oven and rest the meat for 10-15 minutes before removing the bone and carving. #sundays
