A kind of scone with a soft centre and crumbly edge.
Pan di Spagna: delicate and sweet and dangerously moreish. The eggs are whipped until pale, light and fluffy to make this pillow-like, airy sponge. Here enjoyed with a spoonful of sharp nectarine compote that helps to balance the sweetness of the cake. Halved to share with @saltyardbooks.
It’s important to make sure the eggs are room temperature as they won’t whip if cold and, unless you are feeling particularly strong, I would recommend using a stand mixer or hand whisk. Tweaked from apricot upside down cake, an old favourite from @sundaytimesfood.
